[:1]Basically I just ran simcraft and it's telling me to run crit > haste > Mastery, this confuses me since I've never heard anyone mention Crit as ever outdoing haste or mastery.
Am I just reading it wrong, or what?

Stat values shift depending on your current stats. If you add crit, the value of more crit goes down relative to other stats, while the value of other stats relative to crit increases. (That's the same thing, really.)
Similarly, if you reduce crit, the value of adding crit increases relative to other stats.
What this means is that if your stats are significantly out of balance, even a usually-weaker stat may become strong relative to the others. That may be what's happened to you.
So I should try to reforge to crit, but only til I have enough to make haste more valuable again?
I would go to wowreforge and enter in the new stat values into the space where it lets you. Then reforge how it says and run simcraft again to see what the new stat values are.
